We do not have standardized recipes or central commissaries, instead, our chefs and managers are expected to stay abreast of current culinary trends and bring cutting edge food into their cafes. The Executive Sous Chef for Bon Appetit Management Company is responsible for assisting with the overall success of the Food Program. This means adhering to the Client''s culture and guidelines, the Health Department''s regulations, and Bon App tit''s standards and expectations of food quality, freshness and presentation. This position oversees the kitchen''s daily administrative, operational, and culinary tasks, including sanitation and safety. This position also motivates, trains, develops and directs the back of house employees to accomplish the objectives of the operation to the satisfaction of the customers, clients, and Bon Appetit Management Company.
Responsibilities:
Manage cost controls and control expenditures for the account.
Assist the Executive Chef with planning and creating menus.
Produce and execute catering events.
Purchase and manage inventory.
Roll out new culinary programs in conjunction with Bon App tit marketing and culinary team.
Qualifications:
Culinary degree preferred
Two years of culinary supervisory experience
High volume production and catering experience is essential
Previous experience managing cost controls
Desire to learn and grow with a top notch foodservice company
